Instructions

  1. Preheat the oven to 180°C (350°F). Grease and line three 8-inch round cake pans.
  2. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.
  3. In a separate bowl, whisk together the flour, cocoa powder, and baking powder. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Stir in the vanilla extract.
  4. Divide the batter evenly among the prepared cake pans. Smooth the tops with a spatula. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  5. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.
  6. For the chocolate-cinnamon mousse, melt the dark chocolate in a heatproof bowl set over a pan of simmering water. Let it cool slightly.
  7. In a separate bowl, whip the whipping cream until soft peaks form. Gradually add the powdered sugar and cinnamon, and continue to whip until stiff peaks form.
  8. Gently fold the whipped cream into the melted chocolate until well combined. Refrigerate the mousse for 30 minutes to firm up.
  9. To assemble the cake, place one cake layer on a serving plate. Spread a layer of chocolate-cinnamon mousse on top. Repeat with the remaining cake layers and mousse.
  10. For the ganache, heat the whipping cream in a small saucepan until it begins to steam. Remove from heat and pour over the dark chocolate. Stir until smooth and glossy.
  11. Pour the ganache over the assembled cake, allowing it to drip down the sides. Decorate with fresh berries.
  12. Refrigerate the cake for at least 2 hours before serving to allow the flavors to meld and the mousse to set.
  13. Serve chilled and enjoy!
