Preheat the oven to 325°F (163°C).

In a large mixing bowl, sift together the cake flour, granulated sugar, cocoa powder, ground ginger, and salt.

In a separate bowl, beat the egg whites and cream of tartar until soft peaks form.

Gently fold the dry ingredients into the egg whites mixture.

Add vanilla extract and continue folding until well combined.

Transfer the batter to an ungreased angel food cake pan.

Bake for 45 minutes or until the cake springs back when lightly touched.
