Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix well until smooth.
  4. Stir in the boiling water to thin the batter. The batter will be thin, but that's okay.
  5. Pour the batter evenly into the prepared cake pans.
  6. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer them to a wire rack to cool completely.
  8. In a medium saucepan, melt the butter over low heat. Stir in the powdered sugar and chocolate until smooth.
  9. Spread the chocolate fudge frosting over one cake layer. Place the second cake layer on top and frost the entire cake with the remaining frosting.
  10. Let the cake rest for at least 1 hour before serving to allow the flavors to develop.
  11. Slice and serve the delicious chocolate fudge layer cake!
