Chocolate Fudge Cake with Peanut Butter Buttercream and Chocolate Ganache
Ingredients
Instructions
-
Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
-
In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
-
Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.
-
Stir in the boiling water, a little at a time, until the batter is smooth.
-
Divide the batter evenly between the prepared cake pans and smooth the tops.
-
Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
-
Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.
-
To make the peanut butter buttercream, beat the butter and peanut butter together until creamy. Gradually add the powdered sugar and vanilla extract, beating until light and fluffy.
-
Once the cakes are completely cooled, spread a layer of peanut butter buttercream on top of one cake layer. Place the other cake layer on top and frost the entire cake with the remaining peanut butter buttercream.
-
To make the chocolate ganache, heat the heavy cream in a saucepan until it begins to simmer. Remove from heat and add the chocolate and butter. Stir until smooth and shiny.
-
Allow the ganache to cool slightly, then pour it over the frosted cake, letting it drip down the sides.
-
Let the cake rest for at least 2 hours before serving to allow the flavors to meld together.
-
Slice and enjoy!
