Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the cake flour, cocoa powder, baking powder, and salt.
  3. In a large mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the dry ingredients.
  6. Divide the batter evenly between the prepared pans and smooth the tops.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  9. In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and pour over the chocolate. Let it sit for 5 minutes, then whisk until smooth.
  10. In a separate bowl, whisk together the powdered sugar and cornstarch. Gradually add this mixture to the chocolate ganache, whisking until thickened.
  11. Place one cake layer on a serving plate and spread a layer of chocolate ganache on top. Repeat with the remaining cake layer and ganache.
  12. Refrigerate the cake for at least 2 hours to allow the ganache to set.
  13. Garnish with fresh berries before serving.
