  1. Preheat oven to 375°F (190°C).
  2. In a medium bowl, combine chocolate cookie crumbs and melted butter. Press mixture into the bottom and up the sides of a 9-inch pie dish.
  3. Bake crust in preheated oven for 8 minutes. Remove from oven and let cool completely.
  4. In a saucepan, whisk together sugar, cornstarch, salt, and milk. Cook over medium heat, stirring constantly, until mixture thickens and comes to a boil.
  5. Remove from heat and stir in chocolate chips until melted and smooth.
  6. In a separate bowl, beat egg yolks. Gradually whisk in a small amount of the chocolate mixture to temper the eggs.
  7. Return egg mixture to the saucepan and cook over medium heat, stirring constantly, for an additional 2 minutes.
  8. Remove from heat and stir in vanilla extract.
  9. Pour filling into the cooled crust and refrigerate for at least 2 hours, or until set.
  10. Before serving, top with whipped cream and garnish with chocolate shavings. Enjoy!
