Chocolate-Covered Gingerbread Cake

Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a large mixing bowl, combine the gingerbread cake mix, eggs, vegetable oil, and water. Mix until well combined.

Pour the batter into the prepared cake pan and bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer the cake to a wire rack to cool completely.

In a small saucepan, heat the heavy cream over medium heat until it begins to simmer. Remove from heat and pour over the dark chocolate chips in a heatproof bowl. Let it sit for 2 minutes, then whisk until smooth.

Pour the chocolate ganache over the cooled cake, allowing it to drip down the sides.

Sprinkle the candied ginger on top of the ganache.

Dust the cake with powdered sugar before serving.
