  1. Preheat the oven to 350°F. Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  3. In a large bowl, beat together the butter and granulated sugar until light and fluffy. Beat in the vanilla extract.
  4. Add the eggs one at a time, beating well after each addition.
  5. Add the dry ingredients to the butter mixture in three additions, alternating with the coconut milk. Begin and end with the dry ingredients.
  6. Stir in the shredded coconut.
  7. Divide the batter evenly between the prepared pans.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer to a wire rack to cool completely.
  10. In a small bowl, whisk together the boiling water, powdered sugar, and coconut extract until smooth.
  11. Place one cake layer on a serving plate and poke holes in the top with a fork. Pour half of the glaze over the cake.
  12. Place the second cake layer on top and poke holes in the top. Pour the remaining glaze over the cake.
  13. In a separate bowl, whip the whipping cream until stiff peaks form. Spread the whipped cream over the top and sides of the cake.
  14. Sprinkle with additional shredded coconut if desired.
  15. Serve and enjoy!
