  • 1.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Nutmeg
  • 1 cup Zucchini, grated
  • 1 Egg
  • 0.75 cup Brown sugar
  • 0.5 cup Vegetable oil
  • 1 teaspoon Vanilla extract
  • 0.75 cup Chocolate chips
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, beat the egg. Add the grated zucchini, brown sugar, vegetable oil, and vanilla extract. Mix well.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the chocolate chips.
  5. Divide the batter evenly among the muffin cups.
  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove from the oven and let the muffins cool in the tin for 5 minutes. Then transfer them to a wire rack to cool completely.
