  1. Preheat the oven to 325°F (160°C).
  2. Crush the chocolate cookies and mix them with melted butter. Press the mixture into the bottom of a springform pan to form the crust.
  3. In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and sour cream.
  4. Pour the cream cheese mixture over the crust in the springform pan.
  5. Bake for 60 minutes or until the center is set.
  6. Remove from the oven and let it cool in the pan for 10 minutes. Then, remove the sides of the springform pan and let the cake cool completely.
  7. Melt the dark chocolate and whipping cream together in a saucepan over low heat. Stir until smooth.
  8. Pour the chocolate ganache over the cooled cheesecake.
  9. Refrigerate for at least 2 hours or until the ganache is set.
  10. Serve chilled and enjoy!
