Preheat the oven to 375°F (190°C).

In a large skillet, heat olive oil over medium heat. Add the onion and garlic, and cook until softened.

Add the carrots, peas, and potatoes to the skillet. Cook for 5 minutes.

Stir in the flour and thyme, and cook for another 2 minutes.

Slowly pour in the vegetable broth, stirring constantly. Cook until the mixture thickens.

Add the chickpeas, salt, and black pepper to the skillet. Stir to combine.

Transfer the mixture to a pie dish, and cover with the pie crust.

Bake for 30-35 minutes, or until the crust is golden brown.
