  1. Preheat the oven to 180°C (350°F).
  2. Season the chicken breasts with salt and black pepper.
  3. Heat olive oil in a pan and sauté the chicken breasts until cooked through. Set aside.
  4. In the same pan, sauté the onion and garlic until translucent.
  5. Add the spinach and cook until wilted. Set aside.
  6. In a saucepan, bring the chicken stock to a boil. Slowly whisk in the polenta and cook until thickened.
  7. Stir in the milk, Parmesan cheese, salt, and black pepper.
  8. In a greased baking dish, layer half of the polenta mixture.
  9. Top with the cooked chicken breasts and spinach mixture.
  10. Pour the remaining polenta mixture over the top.
  11. Beat the eggs and pour over the polenta.
  12. Bake in the preheated oven for 30-40 minutes or until golden and set.
