Chicken pot pie is believed to have originated in Greece, where it was known as ‘Artocreas’ meaning ‘bread meat’.

Preheat the oven to 400°F (200°C).

In a large skillet, melt butter over medium heat. Add chopped onion and minced garlic, and cook until onion is translucent.

Add diced chicken breast to the skillet and cook until no longer pink.

Stir in all-purpose flour and cook for 1-2 minutes.

Slowly pour in chicken broth and heavy cream, stirring continuously until the mixture thickens.

Add frozen mixed vegetables, salt, and pepper. Cook for an additional 2-3 minutes.

Remove from heat and let the filling cool for a few minutes.

Roll out the puff pastry sheets and cut into squares.

Spoon the chicken filling onto each square and fold the corners to create a bundle.

Place the bundles on a baking sheet lined with parchment paper.

Brush the tops of the bundles with beaten egg.

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown.

Let the bundles rest for 5 minutes before serving.
