  2. In a large skillet, melt the butter over medium heat. Add the chopped onion and cook until softened.

  4. In the same skillet, melt the remaining butter. Stir in the flour until well combined.
  5. Gradually whisk in the chicken broth and milk, cooking until thickened.
  6. Add the frozen mixed vegetables, cooked chicken, salt, and black pepper to the skillet. Stir until well combined.
  7. Transfer the mixture to a baking dish.
  8. Roll out the puff pastry sheet and place it over the baking dish, trimming any excess pastry.
  9. Bake for 25-30 minutes, or until the pastry is golden brown and the filling is bubbly.
  10. Allow the pot pie to rest for 10 minutes before serving.
