  1. Preheat the oven to 425°F (220°C).
  2. In a large skillet, cook the chicken breast until no longer pink. Remove from skillet and shred.
  3. In the same skillet, melt the butter and sauté the onion, carrots, and peas until tender.
  4. Sprinkle the flour over the vegetables and stir well.
  5. Slowly add the chicken broth and milk, stirring constantly until the mixture thickens.
  6. Add the shredded chicken, salt, black pepper, and thyme. Stir until well combined.
  7. Roll out one pie crust and place it in a pie dish. Pour the chicken mixture into the crust.
  8. Roll out the second pie crust and place it on top of the filling. Seal the edges and cut slits in the top crust.
  9. Beat the egg in a small bowl and brush it over the top crust.
  10. Bake for 30-35 minutes or until the crust is golden brown.
  11. Let it rest for 10 minutes before serving.
