Ingredients
  • 500 gram Chicken Thighs
  • 1 cup Guinness Stout
  • 1 cup Carrots
  • 1 medium Onion
  • 1 cup Celery Stalks
  • 1 cup Frozen Peas
  • 1/4 cup All-Purpose Flour
  • 1 cup Chicken Stock
  • 2 tablespoon Butter
  • 1 tablespoon Olive Oil
  • 1 sheet Puff Pastry
  • 1 large Egg
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Thyme
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil and butter in a large skillet over medium heat.
  3. Add the chicken thighs and cook until browned on both sides.
  4. Remove the chicken from the skillet and set aside.
  5. In the same skillet, add the onion, carrots, and celery. Cook until the vegetables are softened.
  6. Sprinkle the flour over the vegetables and stir to coat.
  7. Slowly pour in the Guinness and chicken stock, stirring continuously.
  8. Add the chicken back to the skillet and bring to a simmer.
  9. Stir in the frozen peas, salt, black pepper, and thyme.
  10. Transfer the mixture to a baking dish.
  11. Roll out the puff pastry and place it over the baking dish, trimming any excess.
  12. Beat the egg and brush it over the puff pastry.
  13. Bake for 30-35 minutes, or until the pastry is golden brown and the filling is bubbling.
  14. Let it rest for 10 minutes before serving.
