  1. Preheat the oven to 180°C.
  2. Heat butter in a pan and sauté the onion, carrot, and celery until softened.
  3. Add the chicken and cook until browned.
  4. Stir in the flour and cook for 1 minute.
  5. Gradually add the chicken stock, stirring constantly until thickened.
  6. Add tarragon and season with salt and pepper.
  7. Transfer the mixture to a pie dish.
  8. Roll out the puff pastry and cover the pie dish.
  9. Brush the pastry with beaten egg.
  10. Bake in the preheated oven for 40-45 minutes or until the pastry is golden and crisp.
  11. Allow to rest for 10 minutes before serving.
