Chicken and tarragon pie

Preheat the oven to 180°C.

Heat butter in a pan and sauté the onion, carrot, and celery until softened.

Add the chicken and cook until browned.

Stir in the flour and cook for 1 minute.

Gradually add the chicken stock, stirring constantly until thickened.

Add tarragon and season with salt and pepper.

Transfer the mixture to a pie dish.

Roll out the puff pastry and cover the pie dish.

Brush the pastry with beaten egg.

Bake in the preheated oven for 40-45 minutes or until the pastry is golden and crisp.

Allow to rest for 10 minutes before serving.
