Preheat the oven to 200°C (400°F).

In a large skillet, melt butter over medium heat. Add onions, carrots, and mushrooms. Cook until vegetables are tender.

Add chicken breast and cook until no longer pink. Sprinkle flour over the mixture and stir well.

Slowly pour in chicken stock and heavy cream, stirring constantly until the mixture thickens.

Stir in frozen peas, salt, and black pepper. Remove from heat.

Divide the mixture into 4 individual oven-safe bowls.

Roll out the puff pastry and cut into circles slightly larger than the bowls. Place the pastry circles on top of the bowls, pressing the edges to seal.

Beat the egg and brush it over the pastry.

Bake in the preheated oven for 20-25 minutes, or until the pastry is golden and puffed.
