In a medium bowl, whisk together the flour, baking powder, and salt.

In a large mixing bowl, cream together the butter and sugar until light and fluffy.

Beat in the vanilla extract and eggs, one at a time.

Gradually add the dry ingredients to the butter mixture, alternating with the milk.

Fold in the crushed pineapple.

Pour the batter into a greased 9-inch round cake pan.

Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

In a small bowl, prepare the vanilla pudding mix according to the package instructions.

Once the cake has cooled, spread the pudding evenly over the top.

Sprinkle the shredded coconut over the pudding.

Top with whipped cream and garnish with maraschino cherries, if desired.
