  2. Roll out one pie crust and place it in a baking sheet.
  3. In a large bowl, mix cherries, sugar, cornstarch, vanilla extract, and lemon juice.
  4. Pour the cherry mixture onto the pie crust.
  5. Roll out the second pie crust and cut it into strips.
  6. Create a lattice pattern on top of the cherry filling with the pie crust strips.
  7. Brush the lattice crust with beaten egg.
  8. Bake for 40-45 minutes, or until the crust is golden brown and the filling is bubbly.
  9. Allow the pie to cool for at least 1 hour before serving.
  10. Dust with powdered sugar before serving.
