  1. Preheat the oven to 190°C (375°F).
  2. Roll out half of the pie crust dough and press it into a 9-inch pie pan.
  3. In a large bowl, combine the pitted cherries, granulated sugar, cornstarch, lemon juice, and almond extract. Toss to coat the cherries evenly.
  4. Pour the cherry mixture into the pie crust.
  5. Dot the top of the cherries with cubed butter.
  6. Roll out the remaining pie crust and cut it into strips.
  7. Create a lattice pattern on top of the cherry filling with the pie crust strips.
  8. Trim and seal the edges of the pie.
  9. In a small bowl, beat the egg with water to create an egg wash.
  10. Brush the egg wash over the lattice crust.
  11. Place the pie on a baking sheet and bake for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  12. Remove the pie from the oven and let it cool for at least 1 hour before serving.
  13. Dust with powdered sugar before serving.
