Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together cake flour, baking powder, and salt.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with milk. Mix until just combined.
  5. Divide the batter evenly between the prepared pans. Smooth the tops with a spatula.
  6. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Remove the cakes from the oven and let cool in the pans for 10 minutes. Transfer to a wire rack to cool completely.
  8. In a saucepan, whisk together cornstarch, milk, sugar, egg yolks, and vanilla extract. Cook over medium heat, stirring constantly, until the mixture thickens.
  9. Remove from heat and stir in butter. Let the pastry cream cool completely.
  10. Place one cake layer on a serving plate. Spread the pastry cream evenly over the top.
  11. Top with the second cake layer.
  12. In a heatproof bowl, melt chocolate and heavy cream together. Stir until smooth.
  13. Pour the chocolate ganache over the top of the cake, allowing it to drip down the sides.
  14. Refrigerate the cake for at least 2 hours before serving.
  15. Slice and serve chilled.
