In a large bowl, mix cream cheese, flour, sugar, and salt until crumbly. Add butter and mix until dough forms. Divide into two portions, wrap in plastic wrap, and refrigerate for 30 minutes.

Preheat oven to 375°F (190°C). Roll out one portion of the dough and fit it into a pie dish.

In a separate bowl, toss apples with lemon juice, cornstarch, cinnamon, nutmeg, and vanilla extract. Pour the apple mixture into the pie crust.

Roll out the remaining dough and place it on top of the apple filling. Seal the edges and cut slits on the top crust for ventilation.

Brush the top crust with beaten egg and sprinkle with turbinado sugar.

Bake for 45 minutes or until the crust is golden brown and the filling is bubbly. Let it cool for at least 1 hour before serving.
