  1. In a large bowl, mix cream cheese, flour, sugar, and salt until crumbly. Add butter and mix until dough forms. Divide into two portions, wrap in plastic wrap, and refrigerate for 30 minutes.
  2. Preheat oven to 375°F (190°C). Roll out one portion of the dough and fit it into a pie dish.
  3. In a separate bowl, toss apples with lemon juice, cornstarch, cinnamon, nutmeg, and vanilla extract. Pour the apple mixture into the pie crust.
  4. Roll out the remaining dough and place it on top of the apple filling. Seal the edges and cut slits on the top crust for ventilation.
