Ingredients
  • 16 ounce Chicken Breast
  • 1 cup Cornbread Mix
  • 1 cup Canned Corn
  • 1 cup Black Beans
  • 1 cup Salsa
  • 1 cup Shredded Cheddar Cheese
  • 2 unit Eggs
  • 1/2 cup Milk
  • 2 tablespoon Vegetable Oil
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1/2 teaspoon Cumin
  • 1/2 teaspoon Chili Powder
  • 1/2 teaspoon Garlic Powder
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, sauté the chicken breast until cooked through. Remove from heat and shred the chicken.
  3. In a mixing bowl, combine the cornbread mix, eggs, milk, vegetable oil, salt, pepper, cumin, chili powder, and garlic powder. Mix well.
  4. In a greased casserole dish, spread half of the cornbread mixture on the bottom.
  5. Layer the shredded chicken, canned corn, black beans, salsa, and shredded cheddar cheese on top of the cornbread mixture.
  6. Pour the remaining cornbread mixture over the top.
  7. Bake in the preheated oven for 30-35 minutes, or until the cornbread is golden brown and cooked through.
  8. Let the casserole rest for 10 minutes before serving.
  9. Serve hot and enjoy!
