Preheat the oven to 180°C (350°F).

In a large skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, and cook until softened.

Add the chicken breast to the skillet and cook until no longer pink. Remove from heat and let it cool slightly before shredding the chicken.

In a separate saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.

Gradually whisk in the chicken stock and milk, and cook until thickened.

Stir in the shredded chicken, frozen mixed vegetables, cheddar cheese, salt, and black pepper.

Roll out the puff pastry and line a pie dish with it. Pour the chicken and vegetable mixture into the pie dish.

Cover the pie with another layer of puff pastry and seal the edges. Cut a few slits on top to allow steam to escape.

Beat the egg and brush it over the top of the pie.

Bake in the preheated oven for 30-40 minutes, or until the pastry is golden brown.
