Preheat the oven to 325°F (163°C).

In a bowl, combine graham cracker crumbs and melted butter. Press the mixture into the bottom of a greased 9-inch (23 cm) springform pan to form the crust.

In a separate bowl, beat cream cheese, Greek yogurt, sugar, and vanilla extract until smooth.

Add eggs one at a time, beating well after each addition.

Gradually add flour and lemon zest, mixing until just combined.

Pour the batter over the crust in the springform pan.

Bake for 55-60 minutes, or until the center is set and the top is lightly golden.

Remove from the oven and let cool in the pan for 10 minutes.

Run a knife around the edges to loosen the cake, then remove the sides of the springform pan.

Let the cake cool completely, then refrigerate for at least 2 hours or overnight.
