Ingredients
  • 2 cup Graham cracker crumbs
  • 1/2 cup Butter, melted
  • 2 package Cream cheese, softened
  • 1/2 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1 cup Heavy cream
  • 1 quart Strawberry ice cream
  • 1 quart Blueberry ice cream
  • 1/2 cup Whipped cream
  • 1/2 cup Fresh strawberries, sliced
  • 1/2 cup Fresh blueberries
Instructions
  1. In a bowl, mix graham cracker crumbs and melted butter. Press into the bottom of a springform pan.
  2. In a separate bowl, beat cream cheese, sugar, and vanilla extract until smooth. In another bowl, whip the heavy cream until stiff peaks form. Fold the whipped cream into the cream cheese mixture.
  3. Spread half of the cream cheese mixture over the crust in the springform pan. Top with strawberry ice cream, spreading it evenly. Freeze for 1 hour.
  4. Spread the remaining cream cheese mixture over the strawberry ice cream. Top with blueberry ice cream, spreading it evenly. Freeze for 3 hours or until firm.
  5. Remove the springform pan and transfer the cake to a serving plate. Garnish with whipped cream, fresh strawberries, and blueberries.
  6. Serve and enjoy!
