Preheat the oven to 350°F (175°C). In a medium bowl, whisk together the flour, baking powder, and salt. In a separate large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. Gradually add the flour mixture to the butter mixture, mixing until just combined. Fold in the grated Parmesan cheese and chopped walnuts. Divide the dough in half and shape each half into a log about 12 inches long. Place the logs onto a baking sheet lined with parchment paper, leaving space between them. Bake for 20-25 minutes, or until lightly golden brown. Remove from the oven and let cool for 10 minutes. Reduce the oven temperature to 325°F (165°C). Using a sharp knife, slice the logs into 1/2-inch thick slices. Place the slices back onto the baking sheet and bake for an additional 10 minutes, or until crisp. Remove from the oven and let cool completely before serving.
