Preheat the oven to 375°F (190°C).

Roll out the pie crust and line a pie dish.

In a bowl, combine sliced apples, maple syrup, brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch. Mix well.

Pour the apple mixture into the pie crust.

Sprinkle grated cheddar cheese on top of the apple mixture.

Place the second pie crust over the apple mixture and seal the edges.

Cut a few slits on top of the pie to allow steam to escape.

If desired, arrange bacon slices on top of the pie.

In a small bowl, whisk the egg and brush it over the pie crust.
