Ingredients
  • 2 cup Chard leaves
  • 1 small Onion
  • 2 clove Garlic cloves
  • 1 cup Breadcrumbs
  • 1 cup Parmesan cheese
  • 1 large Egg
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoon Olive oil
  • 1 cup Sorrel leaves
  • 1 cup Greek yogurt
  • 1 tablespoon Lemon juice
Instructions
  1. Blanch the chard leaves in boiling water for 2 minutes. Drain and squeeze out any excess water.
  2. Finely chop the onion and garlic cloves.
  3. In a large bowl, combine the blanched chard leaves, chopped onion, chopped garlic, breadcrumbs, Parmesan cheese, egg, salt, and pepper. Mix well.
  4. Form the mixture into small patties.
  5. Heat olive oil in a frying pan over medium heat. Fry the chard cakes until golden brown on both sides.
  6. Meanwhile, make the sorrel sauce by blending sorrel leaves, Greek yogurt, lemon juice, salt, and pepper in a blender until smooth.
  7. Serve the chard cakes with the sorrel sauce on the side.
  8. Enjoy!
