  2. Cut the cauliflower into florets and boil until tender. Drain and set aside.
  3. Peel and dice the potatoes, carrots, onion, and garlic.
  4. In a large pot, heat olive oil and sauté the onion and garlic until softened.
  5. Add the diced potatoes, carrots, and vegetable broth to the pot. Bring to a boil and simmer until the vegetables are tender.
  6. In a separate pan, melt the butter and sauté the frozen peas until heated through.
  7. Mash the cooked cauliflower and cooked vegetables together until smooth. Season with salt, black pepper, thyme, and rosemary.
  8. Transfer the mashed mixture to a baking dish and top with the sautéed peas.
  9. Bake in the preheated oven for 20-25 minutes, or until the top is golden brown.
  10. Let rest for 10 minutes before serving.
