The Catalan Three kings’ cake is traditionally eaten on January 6th to celebrate the Epiphany, also known as Three Kings’ Day.

  1. In a small bowl, dissolve the yeast in warm milk.
  2. In a large mixing bowl, combine flour, sugar, lemon zest, orange zest, and salt.
  3. Add the yeast mixture, eggs, butter, and almond extract to the dry ingredients. Mix until a dough forms.
  4. Knead the dough on a floured surface for about 5 minutes, until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
  6. Preheat the oven to 350°F (175°C).
  7. Punch down the dough and shape it into a ring. Place it on a baking sheet lined with parchment paper.
  8. Decorate the top of the cake with candied fruits.
  9. Bake for 40 minutes, or until golden brown.
  10. Remove from the oven and let it cool completely.
  11. Dust with powdered sugar before serving.
