The Catalan Three kings’ cake is traditionally eaten on January 6th to celebrate the Epiphany, also known as Three Kings’ Day.

In a small bowl, dissolve the yeast in warm milk.

In a large mixing bowl, combine flour, sugar, lemon zest, orange zest, and salt.

Add the yeast mixture, eggs, butter, and almond extract to the dry ingredients. Mix until a dough forms.

Knead the dough on a floured surface for about 5 minutes, until smooth and elastic.

Place the dough in a greased bowl, cover with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

Preheat the oven to 350°F (175°C).

Punch down the dough and shape it into a ring. Place it on a baking sheet lined with parchment paper.

Decorate the top of the cake with candied fruits.

Bake for 40 minutes, or until golden brown.
