  1. In a large mixing bowl, combine the vanilla ice cream and ricotta cheese.
  2. Line a loaf pan with plastic wrap and layer the bottom with slices of sponge cake.
  3. Sprinkle half of the candied fruit and chocolate chips over the sponge cake.
  4. Pour half of the ice cream-ricotta mixture over the fruit and chocolate chips.
  5. Repeat the layers with the remaining sponge cake, candied fruit, chocolate chips, and ice cream-ricotta mixture.
  6. Drizzle the brandy over the layers.
  7. Cover the loaf pan with plastic wrap and freeze for at least 3 hours.
  8. Invert the cassata onto a serving platter and remove the plastic wrap.
  9. Dust the top with powdered sugar.
  10. Decorate with whipped cream and chopped pistachios.
  11. Slice and serve chilled.
