Fold in the candied fruit, chocolate chips, and pistachios.

In a separate bowl, whip the cream until stiff peaks form.

Gently fold the whipped cream into the ricotta mixture.

Cut the sponge cake into 3 equal layers.

Place one layer of sponge cake in the bottom of a springform pan.

Spread half of the ricotta mixture on top of the sponge cake.

Repeat with another layer of sponge cake and the remaining ricotta mixture.

Top with the final layer of sponge cake.

Cover the pan and refrigerate for at least 2 hours.

Remove from the pan and garnish with whipped cream and maraschino cherries.
