  1. In a bowl, mix ricotta cheese and powdered sugar until smooth.
  2. Fold in the candied fruit.
  3. Cut the sponge cake slices into halves.
  4. Line the bottom of a cake pan with the halved sponge cake slices.
  5. Spread half of the ricotta mixture over the sponge cake.
  6. Repeat the layers with the remaining sponge cake and ricotta mixture.
  7. Cover the cake pan with plastic wrap and refrigerate for 2 hours.
  8. Melt the dark chocolate and drizzle it over the top of the cake.
  9. Spread whipped cream over the chocolate.
  10. Garnish with maraschino cherries.
  11. Freeze the cake for at least 4 hours before serving.
