  2. In a large mixing bowl, combine grated carrots, flour, sugar, oil, eggs, baking powder, baking soda, salt, cinnamon, nutmeg, and vanilla extract. Mix until well combined.
  3. Divide the batter equally among the prepared cake pans. Smooth the tops with a spatula.
  4. Bake for 30-35 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  5. Remove from the oven and let the cakes cool in the pans for 10 minutes. Then transfer them to a wire rack to cool completely.
  6. In a mixing bowl, beat cream cheese, butter, powdered sugar, and passion fruit pulp until smooth and creamy.
  7. Place one cake layer on a serving plate. Spread a layer of the cream cheese mixture over the cake. Repeat with the remaining layers.
  8. Refrigerate the cake for at least 1 hour before serving.
  9. Serve chilled and enjoy!
