Preheat the oven to 180°C (350°F). In a large bowl, mix together the flour, sugar, baking powder, cinnamon, and salt. In a separate bowl, whisk together the eggs, vegetable oil, milk, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Fold in the grated carrots. Spoon the batter into a muffin tin lined with paper liners. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
