Ingredients
  • 200 gram Carrots
  • 200 gram All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 100 gram Unsalted butter
  • 100 gram Granulated sugar
  • 100 gram Brown sugar
  • 2 unit Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Buttermilk
  • 200 gram Cream cheese
  • 100 gram Powdered sugar
  • 1 teaspoon Vanilla extract
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the grated carrots, flour, baking powder, ground cinnamon, and salt.
  3. In a separate bowl, cream together the butter, granulated sugar, and brown sugar.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk. Mix until just combined.
  6. Drop spoonfuls of the batter onto a lined baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are golden brown.
  8. Allow the cookies to cool completely on a wire rack.
  9. In a mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
  10. Spread the cream cheese frosting onto the flat side of half of the cookies.
  11. Top with the remaining cookies to make whoopie pies.
