  2. In a mixing bowl, combine the grated carrots, flour, baking powder, ground cinnamon, and salt.
  3. In a separate bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, until just combined.
