  • 2 cup Carrots
  • 1.5 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Vegetable oil
  • 1 cup Granulated sugar
  • 0.5 cup Brown sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 8 cup Cream cheese
  • 0.25 cup Unsalted butter
  • 2 cup Powdered sugar
  • 2 tablespoon Milk
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and line a baking dish.
  2. In a large bowl, whisk together the flour, baking powder, cinnamon, and salt.
  3. In another bowl, mix together the oil, granulated sugar, brown sugar, eggs, and vanilla extract.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until well combined.
  5. Fold in the grated carrots.
  6. Pour the batter into the prepared baking dish and smooth the top.
  7. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow the cake bars to cool completely.
  9. In a separate bowl, beat the cream cheese, butter, powdered sugar, and milk until smooth and creamy.
  10. Spread the cream cheese icing over the cooled cake bars.
  11. Cut into squares and serve.
