  2. In a large bowl, mix together the grated carrots, flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, salt, vegetable oil, eggs, and vanilla extract until well combined.
  3. Pour the batter into the prepared baking dish and spread it evenly.
  4. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  5. Remove from the oven and let it cool completely in the baking dish.
  6. In a separate bowl, beat together the cream cheese, unsalted butter, powdered sugar, and vanilla extract until smooth and creamy.
  7. Once the carrot cake bars have cooled, spread the cream cheese frosting evenly over the top.
  8. Refrigerate for at least 1 hour to allow the frosting to set.
  9. Cut into bars and serve.
