Grate the carrots and set aside.

In a food processor, blend the dates, almonds, walnuts, coconut flakes, cinnamon, nutmeg, vanilla extract, salt, coconut oil, and honey until well combined.

Add the grated carrots to the mixture and blend again until the mixture sticks together.

Roll the mixture into small balls and place them on a baking sheet.

Refrigerate the carrot cake balls for at least 1 hour to firm up.
