Ingredients
  • 200 gram Carrots
  • 200 gram All-purpose Flour
  • 200 gram Sugar
  • 150 gram Vegetable Oil
  • 3 unit Eggs
  • 2 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Nutmeg
  • 0.5 teaspoon Salt
  • 200 gram Cream Cheese
  • 50 gram Butter
  • 150 gram Powdered Sugar
  • 1 teaspoon Vanilla Extract
  • 100 gram Chopped Walnuts
Instructions
  1. Preheat the oven to 180°C (350°F). Grate the carrots.
  2. In a mixing bowl, combine the all-purpose flour, sugar, vegetable oil, eggs, baking powder, cinnamon, nutmeg, and salt. Mix well.
  3. Fold in the grated carrots and chopped walnuts.
  4. Pour the batter into a greased cake pan and smooth the top.
  5. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool for 10 minutes, then remove it from the pan and let it cool completely on a wire rack.
  7. In a separate bowl, beat the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
  8. Once the cake has cooled, spread the cream cheese frosting evenly over the top.
  9. Optional: Garnish with additional chopped walnuts.
  10. Serve and enjoy!
