  1. Preheat the oven to 180°C (350°F). Grease and flour a cake pan.
  2. Grate the carrots and set aside.
  3. In a large bowl, whisk together the flour, brown sugar, baking powder, cinnamon, nutmeg, and salt.
  4. In a separate bowl, beat the eggs. Add the vegetable oil and vanilla extract. Mix well.
  5. Gradually add the wet ingredients to the dry ingredients, mixing until just combined.
  6. Fold in the grated carrots and chopped walnuts.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
  10. In the meantime, prepare the cream cheese frosting. In a bowl, beat the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
  11. Once the cake has cooled, spread the cream cheese frosting evenly over the top.
  12. Optional: Garnish with additional chopped walnuts.
  13. Let the cake rest for at least 30 minutes before serving.
