Instructions
-
Preheat the oven to 325°F (165°C). Grease and flour a 9-inch round cake pan.
-
In a medium bowl, whisk together the flour, cinnamon, nutmeg, allspice, baking powder, and salt.
-
In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, then stir in the vanilla extract.
-
Gradually add the dry ingredients to the wet ingredients, alternating with the rum and orange juice. Stir in the orange zest, dried fruit, and nuts.
-
Pour the batter into the prepared cake pan and smooth the top. Bake for 2 hours, or until a toothpick inserted into the center comes out clean.
-
Remove the cake from the oven and let it cool in the pan for 10 minutes. Transfer the cake to a wire rack to cool completely.
-
Once the cake is cool, heat the apricot jam in a small saucepan over low heat until melted. Brush the jam over the top of the cake.
-
Allow the cake to rest for at least 24 hours before serving to allow the flavors to develop.
-
Serve slices of the Caribbean-style Christmas cake and enjoy!
