  1. Preheat the oven to 350°F (180°C). Grease and flour a mini cake pan.
  2. Peel and grate the apples.
  3. In a large mixing bowl, whisk together the flour, sugar, baking powder, cardamom powder, and salt.
  4. In a separate bowl, beat the eggs. Add the grated apples, vegetable oil, and milk. Mix well.
  5. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  6. Pour the batter into the prepared mini cake pan, filling each cavity about 3/4 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a cake comes out clean.
  8. Remove from the oven and let the cakes cool in the pan for 10 minutes. Then transfer them to a wire rack to cool completely.
