  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, cook the ground pork over medium heat until browned. Remove from heat and set aside.
  3. In the same skillet, melt 2 tablespoons of butter and sauté the onion, carrot, and potato until the vegetables are tender.
  4. Add the cooked pork back to the skillet and stir in the flour, salt, black pepper, and thyme.
  5. Slowly stir in the beef broth and cook until the mixture thickens. Remove from heat and let it cool slightly.
  6. Roll out the pie dough on a lightly floured surface and cut out circles to fit the size of your pie dishes. Place one circle in the bottom of each dish.
  7. Spoon the pork filling into the pie dishes and cover with the remaining pie dough circles. Crimp the edges to seal.
  8. In a small bowl, beat the egg with water to make an egg wash. Brush the tops of the pies with the egg wash.
  9. Bake in the preheated oven for 25-30 minutes, or until the crust is golden brown.
  10. Let the pies rest for 10-15 minutes before serving. Enjoy!
