Canada Day is celebrated on July 1st to commemorate the anniversary of the enactment of the Constitution Act, 1867, which united the three separate colonies of the Province of Canada, New Brunswick, and Nova Scotia into a single Dominion within the British Empire called Canada.

Ingredients
  • 2.5 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 1 cup Unsalted butter, softened
  • 1.5 cup Granulated sugar
  • 3 Eggs
  • 2 teaspoon Vanilla extract
  • 1 cup Milk
  • 1 teaspoon Red food coloring
  • 0.5 cup Maple syrup
  • 2 cup Whipped cream
  • 1 cup Fresh strawberries, sliced
  • 1 cup Fresh blueberries
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually mix in the dry ingredients, alternating with the milk. Stir in the red food coloring.
  5. Divide the batter evenly between the prepared pans. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cakes to cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. Place one cake layer on a serving plate. Brush with maple syrup and spread a layer of whipped cream. Top with sliced strawberries.
  8. Place the second cake layer on top and repeat the process with maple syrup, whipped cream, and blueberries.
  9. Top with the third cake layer and frost the entire cake with whipped cream.
  10. Decorate with additional strawberries and blueberries.
  11. Refrigerate for at least 1 hour before serving.
