Preheat the oven to 350°F (175°C).

In a medium bowl, combine graham cracker crumbs, melted butter, 1/4 cup granulated sugar, and 1/4 teaspoon salt. Press the mixture into the bottom and up the sides of a 9-inch pie dish.

Bake for 10 minutes, then remove from the oven and let cool completely.

In a medium saucepan, whisk together cornstarch, remaining 3/4 cup granulated sugar, and remaining 1/4 teaspoon salt.

Gradually whisk in milk until smooth.

Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.

Remove from heat and stir in butterscotch chips and vanilla extract until smooth.

Pour the mixture into the cooled crust and refrigerate for at least 2 hours or until set.

Top with whipped cream and drizzle with butterscotch sauce before serving.
