  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, 1/4 cup granulated sugar, and 1/4 teaspoon salt. Press the mixture into the bottom and up the sides of a 9-inch pie dish.
  3. Bake for 10 minutes, then remove from the oven and let cool completely.
  4. In a medium saucepan, whisk together cornstarch, remaining 3/4 cup granulated sugar, and remaining 1/4 teaspoon salt.
  5. Gradually whisk in milk until smooth.
  6. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  7. Remove from heat and stir in butterscotch chips and vanilla extract until smooth.
  8. Pour the mixture into the cooled crust and refrigerate for at least 2 hours or until set.
  9. Top with whipped cream and drizzle with butterscotch sauce before serving.
