Ingredients
  • 2 cup Butternut squash
  • 2 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 1 teaspoon Nutmeg
  • 0.5 teaspoon Salt
  • 1 cup Unsalted butter
  • 1.5 cup Granulated sugar
  • 0.5 cup Brown sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Milk
Instructions
  1. Preheat the oven to 350°F (175°C). In a mixing bowl, combine the butternut squash, flour, baking powder, cinnamon, nutmeg, and salt. Set aside. In a separate bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Mix until just combined. Pour the batter into a greased cake pan and smooth the top. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely. Serve and enjoy!
